Raw Bagels with Sprouted Rye

 Raw Bagels and Cream Cheese

 Yes, the dream has come true! You can make raw bagels and cream cheese that are ALL RAW and ALL VEGAN.

This recipe was modified from Bruce Horowitiz’s book available at www.thesunkitchen.com (Sun Kitchen No Cook Book)

 

Appliances needed: Food processor and dehydrator

 

 

 

Bagels…

Ingredients:

* 4 cups sprouted Rye (Soak Rye overnight. Rinse, drain – use a mason jar, screen and seed sprouting cap. Let the Rye sprout for 24 hours. Be sure to rinse evening and morning)

* ¼ chopped onion

* ½ cup pitted Medjool dates

* 1 Tbsp. olive oil

* 1 Tbsp. garlic

* 2 tsp. Himalyan sea salt

* ¼ tsp. cayenne pepper

Optional toppings for your bagel:

Choose from 2 Tbsp. caraway seeds, hulled sesame seeds,

poppy seeds

Mix ingredients into a bowl. 

 Once they are hand-mixed, they next go into  the food processor. Process for about 30-60 seconds. You might want to “knead” your dough as you are about to form it into your bagel shape.

 One way of doing this easily is to form it into small balls first, about 1-2 inches in diameter. You then roll them out into a flat cookie shape. Scoop out the hole for your bagel with whatever you have handy! (Back of a wooden spoon can work nicely).

 Making small bagels is a good idea. They will not “sour” that way when they are in the dehydrator. Dehydrate your bagels for about 6-8 hours at 105-110 degrees, depending on your preference.  

 Cream cheese with sun dried tomatoes…

Ingredients:

1 cup Sunflower seeds (soak overnight, rinse and drain water then next morning)

¾  cupSun dried tomatoes with 1/2 cup water (these only need to be soaked a couple of hours and use the water in the reciep)

1 Tbsp. lemon juice

1 tsp. garlic

Olive oil – 1 tsp.

Celtic sea salt – 1 tsp.

Cayenne – 1/8 tsp.

Shredded coconut – ½ cup

Soak the sunflower seeds for overnight. Be sure to drain the water and do not re-use the water. The sun dried tomatoes can also be soaked overnight for convenience, but they really need to be soaked longer than a couple of hours in order to re-hydrate them.

Process sunflower seeds and sun dried tomatoes. Add other ingredients and process

until creamy. Enjoy!
